Carrot Hot Dog

Hot Dog:
Large Carrots (4-6)

Marinade:
¼ Cup of Water
¼ Cup Bragg’s Amino Acids (or soy sauce)
2 Tsp. Apple Cider Vinegar
2 Tsp. Rice Vinegar
1 Tsp. Garlic Powder
1 Tsp. Onion Powder
½ Tsp. Smoked Paprika

Procedure:

1. Chop off the ends of the carrots to fit the size of the hot dog bun.
2. Peel the carrots and round the edges of the carrot for a smooth rounded effect.
3. Place carrots into a pot of boiling water for 10-12minutes. Cook until fork tender but not too long that the carrot becomes mush.

While carrots are boiling, make the marinade.

1. Mix all the ingredients for the marinade in a large zip lock bag and give it a good shake! Adjust spices to your liking.
2. Once carrots are cooked, place them inside the marinade. Place in the refrigerator and marinade for 24-48 hours.

The Carrot Hot Dogs can be cooked in various ways such as grilled, broiled, and sautéed. To sauté:

1. Use a non-stick pan (if you are avoiding oil) and heat to medium-high heat.
2. Place the carrot hot dogs in the skillet and add a bit of the marinade to the pan.
3. Watch carefully and flip the hot dogs in order to get a nice cook on all sides.
4. Once finished, it’s time to assemble your hot dog! Get creative and enjoy!

Caramelized Onions

One large onion, sliced

Procedure:

1. In a non-stick skillet, place sliced onion with 1 TBSP of water over medium heat.
2. Watch, stir and add water as needed to avoid burning.
3. Once onions are a dark brown color, remove from heat and serve!
