A Delicious Homemade Carrot Aioli // Healthy and Creamy
This super simple aioli recipe is one you will love to make. 😀
RECIPE:
In a saucepan:
1 medium small peeeled quartered potato, about 1 cup
3 C peeled, chopped carrot
1 tsp salt
hot water to almost cover. Bring to boil, reduce heat and let simmer 12 min or so till the carrots are soft all the way through when you poke them with a fork. Immediately discard the boiling water, you can save it for a soup or cook rice with it or even cook pasta in it.
Put the hot cooked vegetables into your blender immediately.
Blend with:
1/3 C light olive or grape seed oil, or less if you wish
2 1/2 T fresh lemon juice
1 1/2 t salt
4 cloves fresh garlic
Blend until very smooth and creamy, at least one minute. Scrape down the sides to cream everything. Serve hot on broccoli or veggies, even pasta or chill and use as a dip or as a mayonnaise on bread or use it in a wrap. Use it as a mayonnaise to make potato salad, it is delicious and beautiful!
